<p>Faire une pâte sablée à l&#8217;amande en mélangeant le beurre, 40 g de sucre, la poudre d&#8217;amandes et 50 g de farine. La mettre au fond d&#8217;un moule recouvert de papier cuisson et mettre à cuire pour 15 minutes à 180 °C</p>

<p>Mélanger les oeufs et le reste de sucre, puis ajouter la farine<br />

Faire une purée des framboises et la mélanger à la préparation précédente.<br />
La verser sur la pâte aux amandes et remettre au four pour 20 minutes<br />

Laisser refroidir puis découper en carrés<br />

Faire cuire 35 minutes à 180°C<br />

Une fois la tarte sortie du four, le baisser à 130°C<br />
Monter les quatre blancs restants en neige, lorsqu&#8217;ils ont bien fermes, sans arreter de fouetter verser petit à petit les 200 g de sucre restants.<br />
Répartir cette meringue sur la tarte<br />

Mettre 15 minutes à 130°C. On peut après colorer un peu le dessus en le passant 2/3 minutes au grill&#8230;mais attention, ça noircit très très vite. dès qu&#8217;on voit la couleur arriver, il faut sortir la tarte.<br />

450g de farine

1 oeuf

des amandes entieres
Travailler le beurre et le sucre en pommade.
Ajouter la poudre d&#8217;amande et l&#8217;oeuf.

Puis la farine et la levure.
Pétrir jusqu&#8217;à pourvoir former une boule

Faire de petites boules sur lesquelles il faut disposer une amande entière en écrasant légèrement.

<p>On commence par préparer la ganache..<br />
Délayer la pâte de pistache dans la crème et porter à ébullition.<br />
Mélanger les jaunes d&#8217;oeufs et le sucre puis verser dessus la crème bouillante.<br />
Faire un peu épaissir le tout puis ajouter le beurre mou.<br />

<p>Mixer très finement les amandes et les pistaches.<br />
Les passer au tamis ainsi que le sucre glace.<br />

<p>Monter les blancs en neige. y ajouter le sucre en poudre lorsqu&#8217;ils deviennent fermes<br />

Y mettre 20 gouttes de colorant vert et 6 gouttes de colorant jaunes et homogénéiser la couleur (le vert est flashy mais ça s&#8217;atténue à la cuisson)<br />

incorporer délicatement les poudres à la mousse<br />

A l&#8217;aide d&#8217;une poche à douille, former des ronds de pâte sur une plaque à pâtisserie recouverte de papier cuisson. Les laisser crouter à l&#8217;air libre pendant au moins 2 heures.<br />

Les enfourner pendant 15 minutes à 150°C.<br />
A la sortie, mettre un peu d&#8217;eau sous le papier cuisson pour faciliter le décollage. Décoller les macarons et laisser les refroidir.<br />
Les garnir, puis les stocker une journée ( si vous résistez) au frigo avant de les déguster&#8230;</p>
